Description
History
Maison Pommier is based in the Chablis region of northern Burgundy and is known for making authentic, terroir-driven wines shaped by the cool climate and limestone-rich soils. The 2023 Chablis comes from classic vineyard sites and reflects a traditional style: controlled fermentation, lees ageing and crystalline aromatic clarity.

Vinification
Gentle pressing followed by fermentation in stainless steel at controlled temperatures to retain freshness and aromatic purity. Ageing on fine lees enhances complexity and texture without heavy oak influence. The wine rests in bottle before release to harmonise.

Tasting notes
Bright straw yellow with green highlights. Aromas of citrus (lemon, grapefruit), green apple, white flowers and clear chalky minerality. On the palate: crisp acidity, pronounced sapidity and a long, clean finish that invites another sip.
Food pairings
Perfect with oysters and shellfish, white fish carpaccio, sushi and sashimi, vegetable and seafood risottos, fresh cheeses and refined vegetarian dishes. Also excellent with citrus- or herb-based plates.
