History
Maldant Pauvelot is a historic Burgundy producer based in Chorey-lès-Beaune, with generations of experience crafting wines from the Côte de Beaune. The Hishō range was created as a more contemporary and internationally inspired interpretation of Burgundy Pinot Noir while maintaining strong ties to terroir and regional elegance. The 2021 vintage produced wines of freshness, tension and aromatic precision, especially appreciated by lovers of classic Burgundy style.

Vinification
The grapes are hand-harvested and carefully sorted before fermentation in temperature-controlled stainless steel tanks. Maceration is managed gently to preserve aromatic finesse and silky tannins. Ageing takes place partly in French oak barrels with restrained use of wood to keep the varietal character and freshness of the vintage at the forefront.

Bright ruby red. Elegant aromas of fresh cherry, raspberry, wild strawberry and violet emerge alongside subtle spice, forest floor nuances and delicate toasted notes. On the palate it is fresh, silky and harmonious with fine tannins, vibrant acidity and a long refined finish recalling red fruit and light spice.
Food pairings
Pairs beautifully with roasted duck, fine poultry, beef tartare, porcini mushrooms, delicate risottos, refined charcuterie and medium-aged cheeses. Also excellent served slightly cool with elegant Asian cuisine or tuna and salmon dishes.
