Description
History
Domaine Chevrot, located in the southern part of the Côte de Beaune, represents the authentic family and peasant reality of Burgundy. Active since 1830 on a historic agricultural estate dating back to 1798, the winery is managed today by brothers Pablo and Vincent Chevrot, both trained at the Beaune Oenological School.
Since 2008, the entire production has been certified organic, but the Domaine is also committed to environmental sustainability, adopting natural practices such as the use of green manure and horse plowing.
Chevrot wines are distinguished by an intense style, with an explosive and precise fruit, faithfully reflecting the spirit of the terroir of Maranges and Santenay. However, sometimes you can perceive some “rusticity” that derives from a less careful interpretation of these soils. They offer great potential for evolution and more than reasonable prices, embodying the style and tradition of Burgundy.

Production method
In Burgundy, the Pinot Noir winemaking process follows strict regulations to enhance the characteristics of the grape. The grape harvest is manual, with selection in the vineyard, followed by pressing and fermentation in oak vats for approximately 10-15 days. The wine is then transferred to French oak barriques for refinement and malolactic fermentation, which lasts on average from 10 to 18 months. During this period, the wine is tasted to monitor its development. After aging in the bottle, the wine is ready for marketing.

Tasting note
Dark ruby color with violet reflections. On the nose, fragrances emerge from ripe red fruit, such as cherries and raspberries, combined with delicate spicy nuances, mineral hints and freshly wet earthy scents. In the mouth, the tannins stand out firmly but with a pleasant velvetiness, generating an enveloping and delicately silky texture. The structure of the wine is harmonious and impeccably balanced, with a prolonged persistence of fruity and spicy flavors that extend into the aftertaste.
Possible combinations
This wine is perfect for accompanying red meats, mature cheeses and mushroom-based dishes.
