History
Podere della Civettaja is a small winery located in the heart of Tuscany. Founded with the aim of producing wines that authentically reflect the local terroir, the estate has distinguished itself by cultivating Pinot Noir—a grape not traditionally associated with the region but which has found a unique and distinctive expression in these lands.

Production method
The grapes are sustainably farmed and hand-harvested to ensure the highest quality. Vinification involves spontaneous fermentation using indigenous yeasts, followed by aging in oak barrels to enhance the wine’s aromatic complexity and structure.

- Color: Bright ruby red with garnet highlights.
- Nose: Complex aromas of ripe red fruits, such as cherry and raspberry, accompanied by floral and spicy notes.
- Palate: Elegant and harmonious, with silky tannins, lively acidity, and a long, persistent finish.

This Pinot Noir pairs beautifully with dishes based on white meats, such as roasted chicken or turkey, and lighter game preparations. It also complements soft cheeses and dishes featuring porcini mushrooms.
