Production method
The vineyards are in the municipality of Castellina in Chianti, at an altitude of 550 meters above sea level, and extend over a medium-textured soil, rich in skeleton, which gives the wine unique characteristics. The vines in production are 20 years old and offer a (very low) yield of 35 quintals of grapes per hectare. The harvest takes place around September, and the grapes then undergo an alcoholic and malolactic fermentation in wooden tanks, then they are refined in Allier oak barriques, 60% of which are first passage.
