Description
History
Pierre Paillard is a respected independent grower-producer in the Côte des Blancs, known for artisanal vineyard care and minimal intervention winemaking. Les Parcelles is crafted from selected Chardonnay parcels chosen to convey true terroir character. The 2020 vintage is regarded as one of the standout years in recent memory, thanks to favourable climatic conditions that delivered optimal phenolic ripeness, tension and structural depth.

Vinification
Traditional method with secondary fermentation in bottle, extended lees ageing to build complexity and texture, and calibrated dosage to balance freshness and palate breadth. The Magnum format enhances the slow, integrated development of aromatic and gustatory components.

Tasting notes
Bright straw yellow with ultra-fine, persistent perlage. Aromas of ripe citrus, golden apple, white flowers, fresh bread crust, almond and chalky minerality. On the palate: elegant and enveloping with vibrant acidity, harmonious structure, deep sapidity and a long, clean, persistent finish.
Food pairings
Perfect as an elevated aperitif; pairs beautifully with shellfish, oysters, fish carpaccio, sushi and sashimi, delicate risottos, herb-butter dishes and soft cheeses. Also excellent with refined international cuisine or enjoyed on its own as a contemplative wine.
