Description
History
Located in Sant’Anastasia, at the foot of Mount Somma in the Vesuvius National Park, the Cantine Olivella find their home in the heart of the Somma-Vesuvius volcanic complex, formed by the Plinian eruption of 79 AD. This protected area offers the ideal environment for growing wild vines. The company extends over 12 hectares divided between three municipalities: Sant’Anastasia, Pollena Trocchia and Summa Vesuviana, located between 300 and 650 meters above sea level. The grape varieties grown include Catalanesca, Caprettone and Piedirosso.

Production method
After a rigorous manual selection, the grapes are destemmed and left whole, then transferred to 30 hl tanks for fermentation in contact with the skins, using the shower cap wetting system. The wine matures for 10 months in stainless steel tanks, followed by 3 months of bottle refinement. The training system follows the espalier system with Guyot pruning.

Tasting notes
Purplish ruby red colour, this wine stands out for its refinement. Its imposing structure and the elegance of the tannins evolve with spicy pepper tones, berry accents and subtle mineral and balsamic notes at the end. Its well-balanced acidity blends with a pleasant flavor and vibrant tannins, while the fruity return persists precisely.

Ideal in combination with rustic pizzas, savory finger foods and legume soups.
