Description
History
Domaine Drouhin is today the largest and most extensive estate in all of Burgundy and can count on 80 hectares of land divided as follows: 38 hectares in Chablis, 38.5 hectares in Côte de Nuits and Côte de Beaune, 3.5 hectares in Côte Chalonnaise. Within these, most are vineyards classified as Premier and Grand Crus, all planted with Pinot Noir and Chardonnay. The “domaine” was expertly built over the years by one of the most important families in the French wine scene, thanks to targeted purchases and agreements between local families; some vineyards are counted among the most famous in Burgundy such as Clos des Mouches, Montrachet Marquis de Laguiche, Musigny, Clos de Vougeot, Corton-Charlemagne and others.

Production method
The pinot noir grapes used for the production of this wine come from the commune of Nuits-Saint-Georges, one of the most famous and enologically interesting communes in Burgundy; the agricultural techniques used are organic farming techniques from 1990, converted a few years later to biodynamic. The elements that truly characterize these wines are the soils, mainly made up of very ancient calcareous marl and chalk, the vineyards also have very ancient origins, and exposure to sunlight and drainage is among the best possible for the production of quality wine ; even if the peculiar combination of these elements means that the pinot noirs obtained in this municipality are those with greater character and structure, especially as regards the tannins and the gustatory notes, which are very “dark” and deep. The grapes are harvested by hand and undergo a soft pressing, after which the vinification process with fermentation on the skins lasts for 2/3 weeks thanks to indigenous yeasts with frequent submersion of the cap (usually once a day). Aging takes place in barriques (20% new barriques) and lasts for 14-18 months, during which the wine is frequently checked so that the elegance and expression of the territory are as always at the highest levels.

Tasting notes
At sight the wine has a dark ruby red color, with purplish edges. On the nose hints of red currant, plum and undergrowth, with notes of licorice, vanilla, star anise, dried violets and potpourri of red flowers, animalistic, leather and sweet tobacco, with a nice background of intense minerality. In the mouth the wine is very full, structured, almost “violent” and “muscular” with very lively tannins on the finish. Amazing.
Possible combinations
Drouhin’s Nuits-Saint-Georges is certainly one of the most surprising Pinot Noirs in the whole region and in the world due to the hardness and quality of the tannins in the mouth, as well as the particular olfactory and gustatory notes. Perfect to combine with structured meat dishes, including red ones, we also see it very well with game and/or noble poultry.
