The grapes are harvested manually at the end of September. After destemming and pressing the grapes, the latter ferment in stainless steel at a controlled temperature of 24-28°C, with frequent pumping over and punching down. After racking, the wine is transferred to oak barrels where it undergoes malolactic fermentation and is aged for a minimum of 18 months. A few additional months of bottle follow before the actual placing on the market.
