Description
History
Mons Driadalis was established in the Greve in Chianti area as a winemaking project inspired by a passion for the land and the desire to create wines that express its identity. The venture began with a small domestic vineyard of approximately 300 Merlot vines, cultivated with care and dedication. The subsequent acquisition of a Sangiovese vineyard within the Chianti Classico appellation allowed the project to develop two wines: a rosé and a Chianti Classico Riserva. The winery’s philosophy focuses on maintaining a direct relationship with the vineyard, respecting the characteristics of the grapes and keeping production limited. The Chianti Classico Riserva represents the more structured and ambitious expression of Mons Driadalis, designed to highlight Sangiovese’s depth and natural ageing potential.
Grape variety
100% Sangiovese.
Vinification
The Sangiovese grapes are sourced from the estate’s vineyard within the Chianti Classico appellation. Red winemaking involves fermenting the juice in contact with the grape skins, encouraging the extraction of aromatic compounds, colour and the tannins characteristic of the variety. Subsequent maturation allows the wine to develop greater complexity and achieve a more harmonious tannic structure. Under Chianti Classico Riserva regulations, the wine must undergo a minimum ageing period of 24 months, including at least three months in bottle, before release. The result is a red wine intended to express Sangiovese’s distinctive character and natural ability to evolve over time.
Alcohol content

Tasting notes
Intense ruby red, with reflections that may develop towards garnet as the wine matures. The nose reveals a layered aromatic profile of ripe cherry, sour cherry and red berries, complemented by violet, aromatic herbs and delicate spicy nuances. The palate is structured, with well-defined yet balanced tannins and the lively freshness characteristic of Sangiovese. Fruit flavours blend with savoury sensations and subtle earthy notes, leading to a persistent and harmonious finish. A traditionally styled Chianti Classico Riserva in which elegance and structure find a pleasing balance.
Food pairings
Excellent with classic Tuscan dishes such as Florentine steak, peposo beef stew, roast red meats and wild boar. It also pairs beautifully with pappardelle served with game ragù, braised meats, porcini mushrooms and mature cheeses, particularly aged Pecorino Toscano. Its structure and Sangiovese’s natural freshness make it especially suitable for rich, flavourful dishes, allowing the wine to retain balance and depth. Best served at around 16-18 °C.
