Description
History
Nicola and his brother cultivate biodynamic vineyards in 5 hectares of land in Gussago, Franciacorta. Chardonnay and Pinot Noir wines are without added sulfites and have low levels of naturally occurring sulfites. The calcareous-chalky soil gives minerality to the wines. They produce around 35,000 bottles.

Production method
Only 1000 bottles of this cuvée are produced using only the best grapes rigorously harvested by hand in boxes. Fermentation occurs spontaneously with indigenous yeasts and the cuvée is created with most of the grapes from the current harvest and “reserve” wine from many previous harvests, aged in concrete tanks. After the second fermentation in the bottle, the wine ages for about 90 months on its lees. The result is a mature, complex and soft wine, with Extra Brut dosage and only 3g/l of very fine cane sugar added at the time of disgorgement.

Tasting notes
It has an intense cherry pink color with golden reflections, fine and persistent perlage. On the nose notes of blueberry and raspberry jam, wild strawberries, chestnut honey, dried violet and potpourri, yeasts, brioche, melted butter and toasted hazelnuts. In the mouth it is soft and ample, full-bodied, powerful and austere, with a lively acidity and a truly noteworthy minerality and complexity. Very long and spicy, sublime.
Possible combinations
“Molenér” Rosé is truly a “champagne that has the wrong area” due to its complexity and sensations. Exciting, enveloping, we really recommend it as a meditation wine. It lends itself to pairing with tasty and fine fish or meat dishes or with a lasagna.
