The peaceful silence of the Casentino valley reveals much to those who have the patience to listen; from a territory so ancient and rich in history, in 2013, Maria Grazia and Roberto Fregnan began to lay the foundations for their future company with courage and patience, planting 7,000 cuttings of Chardonnay and 3,000 of Pinot Noir in Poppi, 400 meters above sea level sea level. In 2019, they launched on the market the first bottle of “Il Patriota”, the Classic Method of Casentino, which aged for 24 months on the yeasts. This wine is obtained from a proportion of grapes that reflects that present in the vineyards: 70% Chardonnay and 30% Pinot Noir. The bubbles of this wine are of great finesse and persistence, they blend with a fresh sip that offers rich notes of pear and green apple, finishing with suggestive chalky accents.

It is produced according to the so-called champenoise method or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it has in common with the rest of the wines) takes place in fermentation vats; the second, however, takes place directly in the bottle and means that during this second process, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles upon uncorking). The wine rests on the yeasts for 24 months.
Inviting-looking wine, with a bright straw yellow color and thin, persistent bubbles that create an atmosphere of refinement in the glass. On the nose, it offers a fresh and captivating aroma, with predominant notes of ripening pear and green apple, underlined by floral nuances and a mineral touch of chalky notes. In the mouth, it presents a fresh and lively entry, with a fine perlage that tickles the palate. The pear and green apple flavors bring a pleasant crunch and natural sweetness, all in a balanced structure with good acidity. The finish is long and persistent, highlighting the distinctive mineral characteristics of the wine.
To accompany this oenological jewel, we recommend pairing it with fish-based dishes, sushi, ostrich and light appetizers. However, “Il Patriota” can be enjoyed on its own as an aperitif, thanks to its freshness and the liveliness of the bubbles which make it perfect for celebrating special moments or simply enjoying a pleasant evening.
