Description
History
Tenuta La Scolca was acquired between 1917 and 1919 by the great-grandfather of the current owner Giorgio Soldati, who today is firmly at the helm of the company together with his daughter Chiara Soldati. At the time of purchase the property was mostly covered by woods and wheat crops. The constant work and commitment of the family made it possible to radically transform the situation: the decision to plant Cortese vineyards in an area traditionally suited to the production of red grapes until that time was important. This gave rise to a type of wine, Gavi, destined for successful commercial success in the following years, of which Scolca can be considered the creator in certain respects, as it is the oldest company in the area, but also the most modern and innovator.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it has in common with the rest of the wines) takes place in fermentation vats; the second, however, takes place directly in the bottle and ensures that during this second process, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles upon uncorking). The wine ages on its yeasts for a minimum of 10 years.

Tasting notes
Light gold color, with very fine perlage. On the nose notes of candied citrus fruits, exotic fruit, acacia honey, saffron, white pepper and hints of star anise, with a beautiful nuance of vanilla, woody and minerality. On the palate it immediately appears important, with a shoulder, but also creamy and delicate, with a nice acidity and pronounced minerality on the finish. The persistence in the mouth is very long, returning to notes of withered flowers, honey and spices.
Possible combinations
D’Antan is a great Italian classic method sparkling wine suitable for toasting at celebrations, tastings or moments of relaxation in the company of special people. Excellent in combination with foie gras, various pâtés, aperitifs, succulent first courses, carbonara, lasagna, tasty fish dishes, white meats or noble poultry.
