Description
History
Casagori is a biodynamic farm located in the countryside near Pienza, in the province of Siena. Led by Matteo Gori, the estate was developed as a complete agricultural ecosystem in which vineyards, olive trees, grains, vegetable gardens and farm animals contribute to soil fertility and biodiversity. The name Libero, meaning “free”, reflects the honest and graceful character that the producer associates with the wind moving through the vineyards.
Grape variety
90% Sangiovese, 7% Canaiolo, 3% Colorino.
Vinification
The grapes come from Particella 55, a 1.6-hectare southeast-facing vineyard located between 380 and 410 metres above sea level on clay and sandy soils rich in calcareous marine sediments. Fermentation occurs spontaneously with indigenous yeasts, without temperature control and with 5% whole stems. After extended skin maceration, the wine ages for 12 months in used 500-litre French oak tonneaux. It is bottled without filtration.

Tasting notes
Bright ruby red in colour. The bouquet reveals aromas of cherry and fresh red berries, complemented by hints of anise, mint, herbs and delicate earthy nuances. The palate is fresh, juicy and lively, with fine tannins, clearly defined fruit and a pleasant savoury quality. The finish is fragrant, agile and subtly spicy.
Food pairings
Excellent with Tuscan charcuterie, crostini, pici pasta with meat ragù, roast poultry, pork, grilled meats, bean soups and medium-aged cheeses. Its freshness and easy-drinking character make it particularly suited to rustic, convivial dishes.
