The Chiarli family has been producing wines in Emilia for five generations, with the first documents and honorable mentions dating back to 1860-1900. In the first 50 years of the 1900s, the second generation of the family worked very hard to spread Lambrusco and its knowledge in Italy and abroad; the historic Modena Cellar was created in 1925, which still today, albeit restructured, is the historic headquarters of the company. With the advent of the third generation, large autoclaves began to be introduced for sparkling wine with the Charmat method for controlled temperature, which will allow for more fruity and delicate wines to be obtained; it’s circa 1970. With the fourth generation we see the birth of the Lambrusco DOCs and the confirmation of the high quality standards that allow the company to distinguish itself from the main competitors, also keeping faith with the original principles dictated by Cleto Chiarli. In 2000 the Cleto Chiarli project was created and the Lambrusco Premium, Vigneto Cialdini and Lambrusco del Fondatore labels were launched, able to “tell” Lambrusco in all its nuances.

Production method

This wine combines grapes from different vintages. The grapes undergo a traditional pressing with cold maceration (10-12°C) on the skins for 36 hours. Subsequently the must is drawn off and refrigerated, placed in an autoclave where a slow process of fermentation and second fermentation will take place according to the Martinotti-Charmat method. This method in fact provides for the second fermentation in large pressurized containers where the yeasts are already introduced before the must is introduced. Unlike the classic method, this method makes it possible to obtain wines with more delicate and aromatic bubbles precisely by using more delicate types of grapes, which would not withstand prolonged rest on the lees.

Tasting notes

The color obtained is an intense and impenetrable ruby red. Intense aromas of small red fruits, cherries and black cherries, well perceptible savory note and hints of yeast. Full, enveloping and creamy in the mouth, the bubbles gently caress the palate. Pleasantly fruity and savory finish.

Possible combinations

Vigneto Cialdini goes perfectly with first courses such as lasagna or pasta, cured meats such as mortadella and Hungarian salami, or fresh and creamy cheeses. Due to its good substance, it also goes very well with more substantial dishes, especially boiled meat.
