History
The Cantina della Volta estate is located in the Bomporto di Modena region, in a suggestive hilly area surrounded by forests. The exposure to the sun, the cool climate with wide temperature variations and the soils rich in limestone and clay create the optimal conditions for the cultivation of Lambrusco di Sorbara.

Production method
The free-run must is clarified and then fermented in steel vats at a controlled temperature. After at least six months of maturation, carefully selected yeasts are added and it is bottled. The bottles then undergo a second fermentation in a horizontal position and remain to mature for at least 36 months at a constant temperature of 12°C. After the remuage and subsequent degorgement, we proceed with the dosage of the liqueur d’expédition.

Tasting notes
Intense ruby red color with garnet reflections. Aromas of cherries, blackcurrants and wild roses emerge on the nose, along with nuances of cinchona and balsamic notes. In the mouth the bubbles are extremely thin. The taste is savory, dense and creamy, with a well-structured body and excellent extracts.
Possible combinations
Perfect as an aperitif or wine to drink by the glass for lovers of the genre. Ideal with cured meats and creamy cheeses, or with typical dishes of the Romagna tradition such as tortellini or boiled meats.
