Description
History
La Combarbia is a small family-run winery located in Cervognano, one of the finest vineyard areas of Montepulciano. The vineyards lie at approximately 300 metres above sea level on predominantly clay soils with southern exposure. The estate follows a philosophy based on spontaneous fermentations, minimal intervention and faithful expression of Sangiovese and its terroir.
Grape variety
100% Sangiovese.
Vinification
The grapes are harvested entirely by hand. Fermentation takes place spontaneously with indigenous yeasts over approximately 25–30 days with frequent pump-overs to achieve gentle extraction of colour, aromas and tannins. The wine then matures before release while preserving its varietal purity and territorial identity.
Alcohol content
14.5%.
Tasting notes
Deep ruby red with garnet reflections. The bouquet reveals blackberry, cherry and red berry aromas alongside the distinctive floral note of violet. On the palate it is balanced, vibrant and harmonious, with soft refined tannins, lively freshness and a long persistent finish.
Food pairings
Excellent with ragù pasta, braised meats, roasts, Florentine steak, game dishes, aged Pecorino cheese and traditional Tuscan cuisine. It also pairs beautifully with grilled red meats.
