Description
History
The distillery has been present on the island since 1845, when it was created by Jean Marie Martin, who subsequently named the distillery with his initials. In 1914 it would then pass into the ownership of Gustave Crassous de Médeuil and from then on all subsequent generations would be committed to conserving and preserving the tradition of producing extremely high quality agricultural rums. All the sugar cane that is then distilled comes from proprietary land, on soils of volcanic origin which give these products the typical mineral note that distinguishes them and the elegance of the aromas.
Production method
To produce an agricultural rum the starting “base” is given exclusively by the distillation of pure fermented sugar cane juice. This is a procedure that was adopted for the first time in the Central American islands of former French domination, especially Martinique. Usually, this process produces more complex and elegant products, characterized by notes that tend to be drier and drier than the rest of the rums.
