Description
History
The Simonnet-Febvre winery, founded in 1840, is one of the oldest and most prestigious wine houses in the Chablis region. The Irancy Rouge Paradis represents the pinnacle of the appellation’s production, sourced from the finest vineyards. This wine is crafted with respect for tradition to deliver an experience that captures the essence of the region.
Grapes used
- 100% Pinot Noir.
(Note: The Irancy appellation allows the use of the César grape, but this selection is made exclusively from Pinot Noir.)
Production method
- Harvest: Handpicked, with careful selection of the bunches to ensure quality.
- Vinification: Traditional fermentation in stainless steel tanks to preserve freshness and aromatic purity.
- Aging: Aged in oak barrels for approximately 12 months, with a small percentage of new wood to add complexity.

Tasting notes
- Color: Bright ruby red with violet hues.
- Aroma: Aromas of fresh red fruits like cherries and raspberries, complemented by floral notes of violet and a hint of fine spices.
- Taste: Fresh and balanced, with silky tannins, vibrant acidity, and a long, mineral-driven finish.
Possible pairings
Perfect with white meats, roasted poultry, mushroom-based dishes, and semi-aged cheeses. Also pairs wonderfully with light first courses and vegetarian dishes.
