History
Tenuta Ulisse was founded in 2006 by the two brothers Antonio and Luigi Ulisse with the aim of enhancing and innovating the Abruzzo wine production. Ulisse is in fact closely linked to the native vines of the region but there are also innovations and wines produced with international blends: in fact we find Montepulciano D’Abruzzo, Trebbiano D’Abruzzo, Pecorino, Cococciola, Passerina but also Cabernet Sauvignon, Cabernet Franc, Merlot and Chardonnays. The cellar is very modern and equipped to vinify each single vine individually, enhancing the individual characteristics through different techniques and methodologies of vinification and refinement. Passion, technique and knowledge and expression of the territory: this we find in every single wine of the company, characterized by freshness and marked minerality due to the direct exposure of the vineyards to the sea. This blend, originally from South-West France, is so called because it is particularly appreciated by blackbirds who usually peck at the berries of this grape.

Production method
The grapes are harvested and placed whole in the exclusive “Ulisse” cooling tunnel; the cooling of the temperature will allow the acidity and varietal aromas of the grapes to be preserved. Cold maceration lasting about 12 hours. Subsequently we proceed to the actual fermentation which takes place at a temperature not higher than 11°C. This is followed by refinement in stainless steel and subsequent refinement in the bottle.

Tasting notes
At sight it has an intense and bright cherry pink color. On the nose hints of red fruits, blueberry and raspberry and floral notes of rose and herbaceous sensation. In the mouth it is round, balanced by an extraordinary freshness and a mineral note.
Possible combinations
Merlot Ulisse is perfect as an aperitif on a warm spring/summer evening. Perfect to drink in company, it focuses heavily on perfumes and ease of drinking and is therefore the classic bottle to be finished in an instant. As a pairing we see it well on a selection of cold cuts, on a ham and melon, first courses with tomato and basil sauce, Livorno-style cod and white meats.
