Description
History
Firriato developed the Gaudensius project at its Cavanera Etnea estate to showcase Etna’s exceptional suitability for premium Traditional Method sparkling wines. The Carricante vineyards are planted at around 650 metres above sea level on sandy volcanic soils, where significant day-night temperature variations and the influence of the nearby sea preserve freshness and aromatic intensity. Gaudensius pays tribute to Etna’s long-standing sparkling wine tradition through a modern interpretation of this extraordinary terroir.

Vinification
The grapes are harvested by hand during the second half of September. Whole clusters are gently pressed before fermentation at controlled temperature. Secondary fermentation takes place in the bottle according to the Traditional Method, followed by more than 36 months of ageing on the lees to develop exceptional complexity, creamy texture and an elegant, persistent mousse.

Tasting notes
Bright golden straw yellow with a rich, persistent and refined perlage. The bouquet offers aromas of white fruit, acacia blossom, hazelnut and honey, supported by pronounced volcanic minerality. On the palate it is delicate yet concentrated, combining vibrant freshness, creamy texture and remarkable persistence with notes of citrus, almond and flinty minerality.
Food pairings
Excellent as a refined aperitif, it pairs beautifully with oysters, caviar, seafood crudités, shellfish, fish tartare, sushi, seafood risottos, baked fish and delicate white meats. Its structure also makes it an outstanding companion throughout an elegant Mediterranean meal.
