Description
History
Pastrolo is a cru in Lamole acquired by Fontodi, with vineyards planted in 1973 on Macigno marl soils. It is one of the newest entries in Fontodi’s Gran Selezione portfolio: from a small vineyard, high elevation (~600 m), and managed under strict viticulture. The 2021 vintage is the first release under the Gran Selezione label for this cru, marking the estate’s movement toward finer territorial expression.

Vinification
Grapes are hand harvested and sorted; fermentation and prolonged maceration occur in stainless steel or modern vat; followed by about 20 months aging in French oak tonneaux and part in large casks for further integration before release.

Tasting notes
Deep garnet color. On the nose: black cherry, plum, Mediterranean herbs, notes of lavender and graphite, with a mineral thread evoking slate and pencil. On the palate: dense yet fluid, with fine but structured tannins, lively acidity, and a long, precise finish with echoing fruit and spice.
Food pairing
Reveals itself beautifully with robust red meats, braised dishes, game, truffle or mushroom-based cuisine, and heavily aged cheeses. Serve at 18‑20 °C, decanted for at least one hour.
