Description
History
The Palari company is now universally known as the “lighthouse of the lighthouse” for having restored its ancient splendor to a traditional Sicilian wine, precisely the lighthouse, also thanks to the use of some technological innovations and new production methods. The cellars are located inside a villa from the 1700s in the Palari district, in the Messina area, and historical varieties are grown such as nerello mascalese, nocera, nerello hood and many others. All this is undoubtedly thanks to the vision of the patron Salvatore Geraci, who has been able to make this type of wine and this wine-growing area known and appreciated in the world wine scene.

Production method
The grapes are harvested manually in wooden boxes. The vinification is traditional in red with controlled temperature fermentation and maceration on the skins. The wine obtained then ages for 18 months in new Allier and Troncais barriques, and for a further 18 months in the bottle. The wine does not undergo clarification and filtering processes.

Tasting notes
Intense garnet red colour. On the nose rich aromatic bouquet, intense and elegant finish: notes of very ripe red fruit such as black cherry and wild berry jam, potpourri of purple flowers, mineral and brackish note, ash, vanilla, tobacco, peppermint, eucalyptus, licorice and dark chocolate. In the mouth it is warm, powerful, soft and with a great structure, concluded by an extraordinary elegance with freshness and balanced tannins.
Possible combinations
Palari Faro DOC is known as the “lighthouse of Faro” or as the “Burgundy of Sicily” for its elegance and maturity that distinguishes it. A splendid meditation wine to be appreciated in all its nuances, it improves significantly if left to rest for a few years in the cellar. In combination, it stands up very well to important dishes based on red meat or game.
