Description
History
Founded in 2010, Palmento Costanzo is located in Contrada Santo Spirito, Passopisciaro, on the northern slopes of Mount Etna. The winery cultivates its vineyards following organic farming principles and using the traditional “alberello” system. The unique terroir of Etna, characterized by volcanic soils and diverse microclimates, makes each wine a true expression of the land.
Grapes Used
- Nerello Mascalese 80%
- Nerello Cappuccio 20%
Production Method
The grapes come from vineyards located at about 700 meters above sea level on mineral-rich volcanic soils. Harvest is done manually in October. Fermentation occurs in stainless steel tanks with indigenous yeasts, followed by malolactic fermentation. Aging takes place 50% in steel and 50% in 50-hl oak barrels for 12 months, with an additional 12 months in the bottle.
