Description
History
It all started with the passion transmitted to Roberto by his older brother Enzo, who, attending the school under officers of the Guardia di Finanza in Cuneo, met Giuseppe Rinaldi back in 1975 and became passionate about the world of wine, when Roberto was just two years old. Over the years he passed on the same passion to Roberto, who expanded and enriched it to the point of producing wine for home use since 2005. It is from there that he slowly grew as a self-taught oenologist until he began producing wine from the grapes produced in Passopisciaro, a hamlet of the Municipality of Castiglione di Sicilia (CT) in a centuries-old vineyard of about 80 – 100 years in Contrada Feudo di Mezzo, at an altitude of 650 m above sea level, on the northern side of Etna.

Production Method
After a soft pressing, the must without remaining in contact with the skins is clarified in a steel tank through more dry ice, after separating the must from the coarse lees it is transferred to another steel tank to start the spontaneous fermentation at room temperature.

Tasting notes
A pale pink color recalls the color of coral. On the nose, notes of white flowers and small red fruits such as blueberry and raspberry, many citrus notes of grapefruit and pomegranate, you can perceive the flavor and sulfur notes of the volcano. In the mouth it is delicate, full-bodied, fresh, harmonious and balanced.
Possible pairings
It is very refreshing, suitable for warm summer evenings, but it is also perfect when paired with first courses based on vegetables or second courses based on fish.
