Description

History
Named after the Benedictine monk who pioneered Champagne production in the 17th century, Dom Pérignon is only produced in exceptional vintages from a strict selection of the best grapes. The 2004 vintage is remembered for its generous and consistent growing conditions, resulting in a wine with subtle structure and long aging potential.

Grape varieties
Chardonnay and Pinot Noir.

Vinification
Traditional fermentation in stainless steel, aged on the lees for around 8–10 years. The Magnum format allows for slower, more harmonious aging, enhancing the wine’s finesse and complexity.

Alcohol content
12.5%.

Tasting notes
Bright pale gold with a refined, persistent perlage. The nose opens with ripe yellow fruit, candied citrus, toasty notes, hints of almond, and delicate minerality. On the palate it is silky and structured, with fresh acidity balanced by creamy texture and a long finish marked by dried fruit, citrus, and gentle spice.

Suggested pairings
Perfect with refined dishes such as shellfish, oysters, sashimi, butter-poached fish, or foie gras. Also excellent on its own as a memorable toast or contemplative wine.

Dom Pérignon is a prestigious champagne brand initially founded by Moet & Chandon. The first harvest dates back to 1921, even if the first marketing took place only in 1936 following the Great Depression and the collapse of champagne sales; the production is made only in the best years. Usually the bottles are placed on the market at least 8 years after the harvest for the Brut, at least 12 for the Rosé.
