Description
History
In 2006, the Domaine de l’Horizon was born in Calce, a pretty town located near Perpignan in the south of France. This small winery is passionately managed by Thomas Teibert and is completely dedicated to organic and biodynamic agriculture. Today, the Domaine has 14 hectares of vineyards, where the traditional varieties of the area find their maximum expression, such as macabeo, carignano and above all grenache in all its variations: red, white and gray. The average age of the vines is around 40 years and in some cases more than 100 years. We are located in the southernmost part of the Languedoc-Roussillon region, at the foot of the Pyrenees, where the climate is influenced by the combined sea and mountains.

Production method
The bunches are harvested manually in the owned vineyards, cultivated following the principles of biodynamics. The vines are between 60 and 100 years old and the soils are characterized by a rich presence of limestone and pebbles, which give the wines their distinctive mineral character. Fermentation and subsequent maturation take place in wooden barrels of different sizes.

Tasting notes
Bright golden yellow colour. The nose is intense, with notes of exotic fruit, citrus peel and yellow flowers, against a background of aromatic herbs, chalk and refined spices. In the mouth it is structured and is distinguished by a marked mineral sapidity.
Possible combinations
It goes perfectly with fish-based main courses, white meats and recipes delicately seasoned with spices.
