Description
History
Domaine Coche-Dury, based in Meursault, is world-renowned for its Chardonnay, yet it also crafts tiny quantities of Aligoté from limestone-rich vineyards. The same obsessive attention to detail applied to its grander cuvées shapes this wine: extremely low yields, precise vineyard work and meticulous cellar practices. The result is an Aligoté with purity, tension and remarkable finesse.

Vinification
Gentle pressing, fermentation in French oak barrels, ageing on fine lees with limited new oak influence, moderate bâtonnage and minimal intervention at bottling to protect purity and clarity.

Tasting notes
Bright straw yellow. Aromas of citrus, lime, green apple, white flowers, fresh almond and a subtle smoky hint characteristic of the domaine. The palate is vibrant and taut, with lively acidity, great precision and a long, saline, mineral finish. A complex and surprisingly deep Aligoté.
Food pairings
Ideal with shellfish, oysters, fish tartare, ceviche, scallops, light risottos, sushi, sashimi, delicate vegetarian dishes and fresh cheeses. Also excellent as an elegant aperitif.
