Description
History
Hervé Souhaut established Domaine Romaneaux-Destezet in 1993, located in Ardèche on the right bank of the Rhône, opposite the Hermitage hill. With a background in biology, Souhaut practices biodynamic farming methods (without certification), respecting the environment and focusing on local grape varieties like Syrah. Clos des Cessieux is a 1.5-hectare parcel acquired in 2013, characterized by an orientation that ranges from north to south, contributing to the wine’s complexity.

Production method
The grapes are hand-harvested and fermented at low temperatures in wooden vats, using whole clusters to preserve the fruit’s freshness and integrity. The wine is aged for about 8 months on fine lees in used oak barrels, without filtration and with minimal sulfur addition (less than 25 mg/l), maintaining purity and terroir expression.

Tasting notes
- Color: Deep ruby red with violet highlights.
- Aroma: Floral scents of violet and rose, accompanied by notes of red fruits like raspberry and cherry, with a spicy touch of black pepper.
- Palate: Fresh and dynamic, with fine tannins and a peppery minerality. The palate reveals flavors of ripe red fruits, spices, and a slight smoky note, with a long and harmonious finish.
Food pairings
The Clos des Cessieux 2022 pairs perfectly with red meat dishes such as grilled or braised beef, roasted lamb, and game. It is also excellent with aged cheeses and Mediterranean dishes featuring aromatic herbs and spices. Serve at approximately 18°C, ideally after decanting for at least an hour to fully appreciate its aromatic nuances.
