Description
History
Founded around the 70s thanks to the vision of four families of Roman origin, with the aim of revitalizing the area and the vineyards and giving Chianti Classico the fame of the past. The vineyards extend over an area of approximately 75 hectares at an altitude ranging from 475-520 m which are the cradle for wines of character. Today the management of the company is entrusted to Lorenza Sebasti, daughter of one of the owner families who took over the management of the company in 1993. Today it establishes itself as one of the most dynamic realities of Chianti Classico, capable of blending together local grapes with international vines, for results of elegance and finesse both in the mouth and on the nose.

Production method
Only the best grapes from the vineyards of the San Lorenzo valley contribute to the production of this extraordinary wine. The harvest takes place strictly by hand in boxes from the end of August until mid-October depending on the state of ripeness of the individual parcels. Fermentation takes place in steel tanks at a temperature of 32-33°C for a duration of approximately 22-25 days depending on the blend, induced by indigenous yeasts. The wine then undergoes malolactic fermentation in French barriques. The wine then undergoes a refinement period of approximately 12 months in barriques, a good part of which are first use. The wine was bottled in July 2018.

Tasting notes
It has an intense ruby red color with garnet nuances. On the nose hints of fresh but also more ripe red fruit, tending towards jam: cherry, raspberry, currant but also blackberry and mulberry jam. The sensations deriving from wood such as black pepper, cloves, tobacco, leather are also perceptible. In the mouth, good body, not excessive, initially soft and then leaves room for tannins and acidity, albeit very balanced and ripe.
Possible combinations
Wine capable of representing the territory of classic Tuscany, with that touch of elegance and internationality that distinguishes the wines of Castello di Ama. The aromas of this wine follow one another as if in perfect harmony, so it doesn’t really matter what we pair with it, I definitely suggest it as a meditation wine. If you want to combine it, I see it as suitable with second courses of meat, even spiced or with truffles.
