Description

History

Fontodi has been owned by the Manetti family since 1968, who comes entrepreneurially from the famous terracotta sector. The decision to also invest in wine and specifically in the Chianti Classico of Panzano derives precisely from this strong bond with the Tuscan territory and from the desire to enhance the quality production of the region’s excellences, especially Sangiovese. The company is certified organic and extends over 170 hectares of land of which just over 80 are planted with vineyards. All agriculture practiced follows principles of respect for the vineyard, the environment and nature and sustainability is the watchword in Fontodi: we try not only to avoid in the most categorical way the use of chemical and harmful products for the health of the environment, but rather to use material coming from the company itself as much as possible. For example, the vineyards are fertilized using a compost of pruning residues and manure that comes from the internal Chianina breeding. The cellar is very modern and develops vertically in order to exploit the force of gravity to carry out the various winemaking phases which allows us to maintain greater integrity of the fruit and obtain “healthier”, fragrant and intense wines.

Production method

After harvesting, destemming and pressing, the grapes are placed in stainless steel containers where they ferment thanks to the presence of indigenous yeasts naturally present on the skins. The fermentation on the latter lasts for at least 2 weeks with frequent punching down. After this procedure, the wine ages for 24 months in French oak barriques from Allier and Troncais, with a further period of rest in the bottle before being released on the market.

Tasting notes

Intense and bright ruby red color. On the nose notes of nutmeg, berries, currants, liquorice, undergrowth, tobacco and floral hints. A great freshness emerges in the mouth but overall in balance with the tannins, good body, spicy notes and persistent finish.

The wine can be paired with red meat dishes, game, mature cheeses and mushrooms.
