Description
History
The Poggio Torselli estate, on the Chianti hills, has roots in the Florentine Renaissance. Mentioned in 1427, it passed between rich Tuscan families, from the Angiolini to the Antinori. Overlooking Florence and Brunelleschi’s Dome, the estate is a landscape jewel of vineyards and olive groves. After conservative restorations from 1999 to 2005, in 2002 the Villa, the Italian Garden and the park returned to their ancient splendor. In 2003, the new winery was completed for the revival of wine production. Today the property belongs to the Cusano family, an Italian-Canadian family who started an innovation project focusing everything on wine quality thanks also to the oenological consultancy of Carlo Ferrini.

Production method
The alcoholic fermentation process takes place in stainless steel containers using indigenous yeasts and includes maceration on the skins for approximately 20 days, keeping the temperature under control (maximum 26°C). After racking, the malolactic fermentation takes place in wooden barrels, with a refinement period of at least 12 months in 1,500 liter Slavonian oak barrels. During the refinement process, the total lees are preserved for as long as possible through frequent batonnage.

Tasting notes
Brilliant ruby red, with lively notes and intense reflections, resulting clear and viscous in the glass. On the nose, the wine is complex and refined, with a predominance of the typical Sangiovese fruit, accompanied by notes of morello cherry, blackberry, cherry and undergrowth. Upon tasting, the entry into the mouth is warm and enveloping, immediately striking for its softness and complexity. The acidic note gives freshness and is well balanced by firm but sweet tannins, which contribute to the overall harmony.
Possible combinations
It goes well with a wide range of meats (white and red) and with traditional soups of Tuscan cuisine (ribollita, tomato soup, cooked water). It is also excellent with elaborate fish dishes (for example, cacciucco alla livornese).
