Description
History
Domaine Chevrot is a historic family estate located in Cheilly-lès-Maranges in the southern Côte de Beaune. Founded in 1830 and now managed by brothers Pablo and Vincent Chevrot, the estate farms around 20 hectares under organic principles with great respect for its terroirs. Low yields, careful vineyard management and minimal intervention in the cellar produce wines of remarkable purity and authenticity.
Grape variety
100% Pinot Noir.
Vinification
The grapes are harvested entirely by hand and fully destemmed. Fermentation takes place with indigenous yeasts in concrete tanks for around two weeks, followed by 12 months of ageing in French oak barrels. This careful approach preserves the wine’s fruit while adding complexity and finesse.
Alcohol content
13%.
Tasting notes
Bright ruby red in colour. The bouquet reveals aromas of cherry, raspberry and fresh red berries, complemented by delicate floral nuances and subtle spice. On the palate it is silky, fresh and beautifully balanced, with refined tannins, lively minerality and a long, elegant finish.
Food pairings
Excellent with charcuterie, pâtés, roast poultry, duck, veal, mushroom dishes, creamy risottos and soft cheeses. It also pairs beautifully with beef tartare or lightly seared tuna.
