Description
History
The Cherubini farm is located in a natural park in the Brescian hills, where the terroir, made up of limestone and clay rocks, combined with the climatic conditions, gives the wines minerality and acidity typical of the production area. No conventional farming tools are used. The company follows a philosophy of minimal intervention, producing only classic Zero Dosage methods with refinements in cement tanks, to guarantee the maximum expression of the territory of origin.

Production method
In the vineyard a biodynamic regime is followed by intervening with copper sulphate and sulfur assisted by macerated and natural minerals. The harvest is manual in boxes of about 15 kg.
This Cuvèe is made up of Chardonnay and Pinot Noir in approximately equal parts. The harvest takes place between the end of August and the beginning of September. For the Pinot Noir the pressing is very light while for the chardonnay the classic soft pressing. The Crus are vinified separately, the assembly takes place after the spring rest, at the moment in which the second fermentation begins. . The second fermentation takes place with about 15% of vin de reserve stored in barriques. The bases do not undergo clarification or stabilization treatments, in principle we try not to use sulfites. After an aging of at least 60 months we proceed with the disgorgement and the same wine is used for topping up.

Tasting notes
It is presented in a gold color tending towards ocher, the nose stands out for its depth with principles of oxidative notes. On the palate the minerality perfectly accompanies the structure and strength.
Possible combinations
Perfect for an aperitif. It goes perfectly with fresh cheeses, fish tartare, steamed shellfish and fish appetizers.
