Description
History
Eric, a natural winemaker, decided to establish his own winery in the area of Brézème in the Drome and Saint Julien en Saint Alban in the Ardeche, after carrying out deep historical research on the viticulture of this region. It produces territorial wines of Syrah and Roussanne, working organically in the vineyard and vinifying whole bunches in the cellar. Its goal is to produce classic wines from the Northern Rhône Valley that are fine, elegant, fresh and suitable for ageing. It has about 12 hectares of vineyards for a production of about 80,000 bottles. Eric has recently involved his son Martin in the project and continues to produce some bottles from old vineyards in Chateauneuf du Pape and on the Cote Rotie for study and pleasure.
Production method
The grounds of the company are in granite. The de-stemmed grapes are partially pressed, the fermentation takes place in cement with 8 days of maceration. Even the aging is in cement.

20% Cinsault and Clairette.

Tasting notes
Intense ruby red colour. On the nose, notes of fresh and sweet notes of red fruit and floral fragrances, which then veer towards spicy and piquant memories. The sip is pleasantly soft and elegant, juicy and simple, with freshness and minerality.
Possible combinations
In combination it is excellent with first courses with meat sauce or with red meats in general. Also excellent with selections of medium-aged cheeses, it is a wine that also adapts very well to fish, especially grilled.
