Description
History
Domaine Ramonet, based in Chassagne-Montrachet, is globally respected for white Burgundy mastery and meticulous red wine production. The Les Boudriotte vineyard sits on limestone-marl soils with excellent exposure, producing Pinot Noir with structure, mineral precision and outstanding ageing potential. The 2017 vintage, marked by slow ripening and ideal climatic conditions, yielded profoundly balanced wines.

Vinification
Hand-harvested grapes; fermentation with indigenous yeasts in steel or concrete, with careful maceration to extract elegance and structure. Aged in French oak barrels of various sizes with measured use of new wood, followed by extended bottle ageing to refine aromatic integrity and complexity.

Tasting notes
Deep ruby red with garnet highlights. Aromas of dark fruits (morello cherry, blackberry), forest floor, refined spices, violet and subtle mineral undertones. On the palate: elegant and enveloping, with silky yet structured tannins, vibrant acidity, superb balance and a long finish with returning fruit and spice. A precise wine with further ageing potential.
Food pairings
Excellent with roasted red meats, braised dishes, game, porcini mushrooms, grilled duck, rich risottos and semi-firm cheeses. Also superb on its own for contemplative tasting.
