History
Champagne Brut Blanc de Blancs Pascal Doquet “Vertus” Premier Cru 2005 75 cl bottle is a champagne produced by the Pascal Doquet maison. The company was created in 1976 by Michel Doquet and Nicole Jeanmaire, who reorganized some vineyards by starting to personally vinify the grapes. In 1995, his son Pascal changed the name of the company to the current one and increased the quality of the production, also innovating the techniques used; will introduce organic cultivation, subsequently officially certified in 2010, according to which respect for the vineyard and its typical characteristics, the use of compost manure, organic fertilizer and use only of natural herbicides prevails. A policy that we then find in every type of step carried out in the vineyard and in winemaking, a policy that will then give life to some of the most complex and interesting bubbles in the whole panorama of French bubbles.

Production method
Champagne is produced by fermentation of grape must in the bottle, with the addition of dosage and a long maturation on the lees. The method is called “méthode champenoise” and is typical of the Champagne region in France.

Tasting notes
It has an intense and crystalline straw yellow color. Notes of citrus fruits and white flowers on the nose, with complex notes such as melted butter, toasted almonds and dry pastries. In the mouth the effervescence and enveloping, complex, ends with a marked acidity that “cleans” the drink, and a long and persistent finish that recalls the almond again.
Possible combinations
A Blanc de Blancs champagne, produced exclusively from Chardonnay grapes, is perfect for combinations with delicate dishes such as seafood, shellfish and fish, especially if prepared with light sauces. It’s also a great complement to creamy cheese dishes like brie and camembert. For an even more original combination, it can be served with dishes based on chicken or turkey, or accompanied by desserts based on fresh fruit or dry pastries. Finally, a Blanc de Blancs champagne can be enjoyed on its own as an aperitif, thanks to its freshness and balanced acidity.
