History
Company located in the Montagne de Reims, historic Champagne area, it has been family-run for 50 years. The main vineyards are located in the villages of Ludes, Brouillet, Vavray and Villedommange. The vinifications are made separately for each grape variety in order to separate each typical character of the various areas. The viticulture applied by the company respects the environment and the balance between soil, vegetation and climate.

Production method
The solera method involves aging different vintages of wine mixed together in a system of overlapping barrels. The younger wine is blended with the older one, creating a final product of great complexity and stability. The champagne production method then involves fermentation in the bottle with the addition of sugar and yeast. After fermentation, the wine is left to rest on the lees for at least 15 months. The process of removing the yeasts, called “removal”, takes place with the inversion of the bottles and the subsequent addition of dosing liquid. The dosing liquid, a blend of sugar and wine, determines the sweetness level of the champagne. Finally, the bottles are sealed with a mushroom cap and left to rest for a few months before being marketed.

Tasting notes
Straw yellow color with golden hues. On the fruity nose, notes of honey, spices, candied fruits and finally citrus fruits prevail. On the palate there is a great balance between acidity, sapidity and roundness. Excellent for combinations with important meats but also at the end of a meal with pastries, preferably dry.
Possible combinations
Champagne perfect as a meditation wine or in combination with rich and complex dishes.
