Description
History
Oto is a Champagne producer known for artisanal care and a focus on terroir expression. The Blanc de Noirs represents the “red” side of the range, made from carefully vinified red grapes in white wine style using traditional method, accentuating the varietal power of Pinot Noir and/or Pinot Meunier with elegance and depth.

Vinification
Traditional method (Champenoise) with secondary bottle fermentation. Primary fermentation in stainless steel at controlled temperatures preserves freshness and varietal aromatics. This is followed by refermentation in bottle and extended lees ageing to build structure, complexity and fine perlage. Dosage is balanced to support freshness without masking varietal character.

Tasting notes
Straw yellow with golden highlights and fine, persistent bubbles. Aromas of ripe red fruit, golden apple, bread crust, light spice and mineral hints. On the palate: harmonious with fresh acidity, full structure and savoury tension; long finish with recurring fruity and spice notes.
Food pairings
Pairs beautifully with seafood starters, oysters, shellfish, sushi and sashimi, fish carpaccio, richer fish dishes, roasted poultry and soft cheeses. Also excellent on its own as a contemplative sparkling wine.
