Vincent Cuillier is a young vigneron who since 2018 has decided to produce two biodynamic champagnes from two small plots in Reims.

The indigenous yeast fermentation takes place in a small stainless steel tank, followed by a full year of tank aging. This cuvée spends the required 36 months sur lattes and does not undergo fining or filtration before being disgorged by hand with zero dosage.
Intense golden yellow with fine perlage. It shows notes of berries, a crisp acidity and fine and complex mineral lines. The texture on the palate is creamy, fine and transparent, with a surprising persistence.
It lends itself perfectly as a sophisticated aperitif, but also as an accompaniment to fine dishes such as scallops and salmon.
