Description
History
The Gatinois house boasts a centuries-old history of Champagne production, dating back to 1696. Its terroir is located in the tiny district of Aÿ, a village at the foot of the Montagne de Reims. Here, surrounded by uncontaminated nature, the union between Chardonnay and Pinot Noir gives some of the most fascinating expressions in the world.

Production method
It is produced according to the so-called champenoise method or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it has in common with the rest of the wines) takes place in fermentation vats; the second, however, takes place directly in the bottle and ensures that during this second process, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles upon uncorking).

Tasting notes
Intense straw yellow color with a golden hue. On the nose this champagne opens with rich fragrances of bread crust, yeasts and candied peel, followed by notes of brioche, wholemeal bread and honey. In the mouth, it is enveloping, soft and balanced, offering a pleasant creaminess and lively freshness, with a perfect balance between fruity sweetness and savory minerality. Its drinkability is such that it is difficult to resist an open bottle.
Possible combinations
It can be accompanied by fish, shellfish, cheeses, appetizers and desserts. Furthermore, it is perfect for celebrating special occasions or for an informal toast with friends.
