Description
History
For five generations, Guy Michel has been a winemaker located in Pierry, the first village south of Epernay, in the heart of the Marne Valley. His own vineyards cover about 20 hectares, distributed in about ten villages, which means that each harvest can count on a wide range of extremely different grapes: 50% Meunier, 30% Chardonnay and 20% of Pinot Noir, coming from different soils both in terms of soil and climatic conditions and exposure.
The vinification takes place in stainless steel using indigenous yeasts, while the removal of the lees (dégorgement) and the dosage are carried out according to market requests and only before the bottles are put on sale. However, by company choice, the bottles are never put on the market for at least 7 years after bottling.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked).

An elegant explosion of complex aromas and a pleasant effervescence. Notes of ripe fruit, citrus, hazelnut and a long persistence. Rich and enveloping champagne that delights the senses.
