Description
History
Manuel De Sousa, the paternal grandfather originally from Portugal, arrives in Avize in 1929. Soon after, he starts the agricultural business that he shares with his grandfather. Since 1986, the maison has been led by Erik De Sousa, a representative of the third generation. Erik is a renowned small producer from Avize, highly regarded by experienced true Champagne connoisseurs. For three generations, the De Sousa company has been located in the heart of the prestigious Côte des Blancs.
The company owns plots in communes classified as Grand Cru, such as Avize, Cramant, Oger and Mesnil/Oger, and in the territories of Aÿ and Ambonnay as regards Pinot Noir.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked). The wine rests for at least 72 months (6 years) on the lees.

Tasting notes
Intense golden yellow color with fine perlage. The wide and sophisticated aromatic range is manifested through vibrant notes of citrus fruits, nuts, white flowers and a subtle hint of roasting, which come together harmoniously in a balance of complexity and freshness. The taste confirms expectations, offering a generous but well-structured liquid, characterized by a pleasant high quality saline texture.
Possible combinations
Ideal as an aperitif, or on the occasion of a toast or a celebration. Excellent in combination with succulent first courses, or with tasty second courses of meat or fish, oysters and shellfish, or with a nice baked salmon.
