History
Founded in 1951 by Georges Pertois, who started the production of Champagne in the Côte des Blancs region, using high quality Chardonnay grapes. Over the years, the company has continued to grow, passing from generation to generation and expanding its production of Champagne, up to the present day with a vineyard area of about 15 hectares

Production method
After harvesting, the grapes are gently pressed to extract only the first pressing must, which is then fermented in stainless steel at low temperatures. Subsequently, the base wine is assembled and bottled together with a solution of sugar and yeasts, which will give rise to the second fermentation in the bottle. This stage of maturation can last from 24 to 36 months

Tasting notes
Light golden yellow colour, with fine and persistent perlage. On the nose, notes of yellow-fleshed fruit emerge, such as peach and apple, accompanied by hints of white flowers and mineral nuances. In the mouth, the wine is fresh and balanced, with good acidity and a fruity taste, which develops into a long and pleasantly dry finish.
Possible combinations
It goes perfectly with raw or cooked fish dishes, such as sushi, carpaccio and tartare, but also with crustaceans and molluscs.
