Description
History
The story of Dhondt-Grellet begins in 1990, when Michel Dhondt decides to devote himself to the cultivation of Chardonnay grapes in the Côte des Blancs region. Initially the grapes were sold to other companies, but in 1996 Michel decided to produce his own Champagne under the name Dhondt-Grellet. Subsequently his son Adrien joins the company and today runs it together with his father. The production is limited and artisanal, with the aim of expressing the maximum of the terroir and of the Chardonnay grapes.

Production method
The production process begins with a manual harvest, followed by a gentle pressing of the whole grapes. Fermentation takes place in oak barrels, followed by maturation on the lees for about 24 months.

Tasting notes
Golden yellow and a fine and persistent perlage. The nose perceives hints of citrus, apple, pear and mineral notes. In the mouth it is fresh and sapid, with good acidity and a long and persistent finish.
Possible combinations
Ideal as an aperitif or to accompany dishes based on fish, shellfish and fresh cheeses.
