Description
History
Domaine Vouette et Sorbée is managed by Bertrand Gautherot, winemaker from Buxières-sur-Arce, in the Côte des Bar. The five hectares of vineyards are located on land with similar characteristics to that of Chablis, composed of Kimmeridgian marl. The vines, mainly cultivated with Pinot Noir, have an average age of 21 years and are managed entirely according to the principles of organic farming. Since 1998, the company has been Demeter certified.

Production method
It is produced according to the so-called champenoise method or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it has in common with the rest of the wines) takes place in fermentation vats; the second, however, takes place directly in the bottle and ensures that during this second process, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles upon uncorking).

Tasting notes
Brilliant straw yellow color with a fine and persistent perlage. On the nose, pleasant notes of white flowers such as jasmine are perceived, enriched with hints of citrus fruits. The bouquet is completed by a finish reminiscent of meringue, a mix of toasted and sweet. On the palate, the liveliness that animates the taste is striking: the sparkling bubbles and the intense minerality create a structured and vibrant sip, which never seems to abandon.
Possible combinations
It can be accompanied by fish, shellfish, cheeses, appetizers and desserts. Furthermore, it is perfect for celebrating special occasions or for an informal toast with friends.
