History
The foundation of the Domaine dates back to 1921, when a group of winemakers from the Aÿ region of France came together to create a high quality Champagne company. Over the years, the company has distinguished itself for the production of refined and high quality Champagnes, using traditional and innovative production techniques at the same time. Today, the Champagne Collet company is internationally recognized for its excellence, its distinctive style and its attention to environmental sustainability.

Production method
Fermentation takes place in wooden barrels, followed by subsequent maturation in the bottle on the lees for at least 4 years.

Tasting notes
Golden yellow, with fine and persistent perlage. On the nose, a bouquet of intense aromas of ripe fruit, citrus fruits, white flowers and hints of toasting and spices emerges. In the mouth, the wine stands out for its complex and enveloping structure, with a perfect harmony between acidity and flavour. The finish is long and persistent, with mineral hints and an aftertaste of toasted almonds.
Possible combinations
An excellent choice to accompany fish, seafood or white meat dishes, but it is also suitable to be enjoyed alone as a classy aperitif.
