History
Champagne Brut Rosé “Fascinante” Dom Caudron 75 cl bottle is a champagne produced by the Dom Craudon maison of the Vallée de la Marne. After a visionary and brilliant idea of the priest Aimé Caudron, after having consulted in 1929 with 23 winegrowers, he decided with their help to start producing Champagne with the exclusive use of Pinot Meunier grapes. La Meunier has remained the symbolic grape of these winemakers, the profound dedication to work and the link with the original land, has given life to a range of Champagnes within the reach of anyone, from the most expert palates to those with less experience. Since then more than 60 winegrowers have joined the cooperation movement started by Don Caudon in 1929.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked). The rosé color is given by the resting of the wine with its skins at a controlled temperature, which allows, in addition to the extraction of color, also to extract important aromatic components from the skins. After fermentation, it rests on the lees for at least 24 months before being disgorged.

Tasting notes
At sight the product has a bright salmon pink colour. The perlage is fine and persistent. On the nose there are hints of cherry, currant and peach pulp. In the mouth it is elegant and fresh counterbalanced by a fresh and sharp acidity, incredible vinosity and a long finish.
