Description
History
This wine comes from a small family business located in the prestigious Grand Cru of Aÿ, a short distance from the famous city of Epernay. The Goutorbe family has a long tradition in the wine sector, especially in the art of viticulture, which has been handed down from generation to generation up to the present day. The current vineyards are the result of a selection of the best plants, with genetic characteristics suitable for producing grapes of the highest quality, also considering the specific soil and climatic conditions of each parcel of land. The winery covers a total of 22 hectares, with vineyards located in Aÿ, Mareuil-sur-Ay, Bisseuil and Dizy.

Production method
It is produced according to the so-called champenoise method or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked).

Tasting notes
Bright straw colour, accompanied by a delicate and persistent effervescence. On the nose, floral aromas are perceived, notes of white pulp fruit, citrus fruits, pastry and honey. On the palate, the wine is rich and harmonious, with a large and expressive entry, followed by a pleasant freshness in the finish.
Possible combinations
It can be accompanied by fish, shellfish, cheeses, appetizers and desserts. Furthermore, it is perfect for celebrating special occasions or for an informal toast with friends.
