History
Champagne Blanc de Noirs Brut “Cuvée Tradition” Serge Mathieu 75 cl bottle is a champagne produced by the maison Serge Mathieu. We are in Avirey-Lingey in the southern part of Champagne; the company has been family-run since about 1760 and today it has about 12 hectares of vineyards.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked).

Champagne Blanc de Noirs Brut “Cuvée Tradition” Serge Mathieu 75 cl bottle shows an intense straw yellow color, with a golden note, persistent perlage. Intense, delicate nose, with notes of yellow fruit such as ripe peach, almond, yeasts and a slightly spicy note. Full-bodied, enveloping in the mouth, it returns to the fruitiness with a good final persistence.
Possible combinations
Champagne Blanc de Noirs Brut “Cuvée Tradition” Serge Mathieu 75 cl bottle is perfect as a pairing on fatty and fragrant, aromatic first courses, for example butter risotto flavored with mushrooms or truffles or other herbs.
